chocolate chip cookies
with brown butter

If you ever dreamt of the one cookie dough recipe, this is it.
I have made it many many times and I will not change a thing about it. 

Instead of the classic ones with dark chocolate, put in whatever else you want:
Try out chunks of nougat, white chocolate and chopped macadamia nuts, or crashed soft caramel bonbons. Whatever you do, don´t forget the pinch of seasalt in the end.

250g butter
250g raw cane sugar
(to all Germans: the Rohrohrzucker from Alnatura works very well)

1 Tbsp real vanilla sugar
2 eggs
250g flour
1tsp baking soda
1 tsp coarse sea salt 

200g high quality dark chocolate

 

 

 

 

Place the butter in a small saucepan over medium heat. Melt it and let it cook until it gets golden brown, set aside and let cool slightly. 

In a large bowl, whisk together the brown butter and sugar. Add the eggs and whisk until the mixture lightens. Add the flour, salt and baking powder and fold it in until just combined, don´t overmix the dough. 
Chop the chocolate coarsely and mix it in.

With an ice-cream portioner, scoop out little balls of dough on a baking sheet with parchment paper. Sprinkle with some more salt and bake at 180°C for about 10-12 minutes. The center should still be soft and chewy.
